I'm back!

It has been a LONG while since I last posted. It's not that I haven't been cooking and baking. Its just I haven't had the time to put the extra work into showing the WORLD. LOL! Actually it's probably more about being lazy or remembering half way through something OH, I should be taking pictures of this. Well I have two things I want to share with you that I've done in the last week. One I forgot to take a lot of pictures but I have a good one to show. The second I did a much better job because I left my camera sitting right where I was cooking!

I also will include pictures of Tim's homemade CHILI MAC since he made me take pictures of it. I don't have a recipe to go with it but next time he makes it I will try to get him to write it down and post it then. It sure was really good though!

The first thing I wanted to try this week has been in the back of my mind since my parents got me my toaster/convection/rotisserie oven for graduation. I have never made a rotisserie chicken before but it sure tastes good. I saw my opportunity when Safeway had fresh chickens on HOT PRICE. I thought...hmmm this could be my chance...if I screw up...well...its a $3.50 chicken.

I looked up lots of different complicated ways to make this clucky but I thought simple for my first time was probably best. I washed the bird and let it sit in the fridge for approximately two hours. When it was time to start turning, I put the bird on the spit and secured it as best I could. I had looked up seasonings and temps and times but I had a hard time finding the temps because most of the world uses their grill and just said high heat. I didn't want to burn it so I started out slow. I set the oven to 375 and let it heat up as I EVOOd the bird and put salt and pepper all around. It was as easy as put the bird in...shut the door and watch it rotate around and around. I put it in at first for an hour so I can check on it! Here is my ONE and only picture taken while cooking....


This is in the beginning but it came out well.

Well I let the bird spin for approximately 1.5 hours. I had to crank the heat up to 410 about half way through cause I just didn't think it was hot enough. If anyone has a suggestion on the heat let me know. I also should get a thermometer and just let it tell me when its done.

When it came out it looked good! I let it rest a little so the juices would stay inside when I cut it open. About 10-20 minutes. Made up some mashed potatoes and green beans as sides and had a great dinner.

Now we only ate half this bird. Its a lot of chicken for two people...but I had plans for that second half. About two hours after we were done, I pulled the left over chicken from the bones and shredded it up. Later that week I made up some AMAZING chicken salad with it. Again I didn't take pictures but I thought I would put the recipe up so you can try it if you want. Tim loved it! He was mad we ate it all for one meal!

Chicken Salad Melts

4 cups of rotisserie chicken (shredded)
1/2 cup of mayo (to start I added more at the end)
1 tbs of spicy brown mustard
1 stalk of celery finely chopped
salt
pepper
4-5 Slices or hand fulls of your favorite cheese
4-5 slices of bread


Mix together the chicken, mayo, mustard and celery until incorporated well. If you need to add more mayo you can do so now. Salt and Pepper to taste. Set your toaster oven to 350 on bake. Top 4 or 5 slices of bread with a large helping of chicken. Spread it across the bread evenly and top with cheese. Put into toaster oven for approx 10-12 minutes or until the cheese is melted on the top. Pull out and its ready to serve!



My second (I guess third really) project was making some things for Tim to eat this weekend while I am gone to my sister's 21st birthday! I decided to try some personal calzones. I have made a pizza roll before but I thought these might work better and I can fill them with different fun things. I started working on that today.

Personal Calzones
One pizza dough (store bought or homemade)

Toppings (you can use whatever you would like)
bacon ham
ground beef turkey
ground sausage multiple kinds of cheese
pizza sauce


I bought already made pizza dough from Trader Joe's. You can use any type of pizza dough. I cut the dough into four equal parts. Taking one of the four pieces I rolled the dough into a square shape. I added in the toppings I wanted some meats and cheeses.



After I put the toppings in I folded over the top and pinched together the sides.

After making all my different fillings I put them on a cookie sheet in a 500 degree oven for 12-15 minutes or until browned on top.

These came out great! They are golden brown on top and the perfect size for one person

I did have some leakage of cheese on some because I didn't seal them as well as I should have but nothing too bad. I didn't put sauce in every one. You can always use sauce to dip these in once you have them finished.


Here is one opened up that has mozzarella cheese, ground beef and bacon! It was so delicious!

Wow. Your camera is really good. I didn't realize I could click on the pictures, but somehow I did and everything looks even yummier at full size!

Katie, i read every time you post. Ross and I are totally trying these calzones for dinner tomorrow! They look great- how did you make sure they weren't doughy inside?
